Wright Wride Coffee Cake

Ingredients

  • 2 cups light brown sugar

  • 2 cups flour, sifted
  • 1/4 lb (1 stick) margarine or butter
  • 1 egg
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • Cinnamon

Preheat oven to 350 degrees F.

Mix sugar and flour together. Cut margarine or butter into pieces and cut into the sugar/flour mixture.

Set aside 1 cup of this crumb mixture.

Whisk baking soda into buttermilk in a small bowl, then beat egg into soda/buttermilk mixture.

Add this to the sugar/flour/butter mixture and mix well.

Pour into a 9 X 13 pan that has been greased and floured on the bottom only. Sprinkle the top with cinnamon to taste.

Sprinkle reserved crumb mixture on top, then sprinkle more cinnamon to taste.

Bake at 350 degrees for 35 minutes.

Wright Wride Salad

Ingredients

  • 1 package pre-shredded coleslaw
  • 1 package pre-shredded broccoli slaw
  • 1 package of chicken-flavored ramen noodles, broken up
  • 6 green onions, chopped
  • 1/2 cup chopped or sliced almonds
  • 3 tablespoons sesame seeds

Mix the slaw and the chopped green onions. Carefully sauté broken-up noodles, almonds and sesame seeds in 1 to 2 tablespoons

of butter or margarine (burns easily).

Dressing

  • 1/2 cup oil
  • 3 tablespoons vinegar
  • 2 tablespoons sugar
  • Packet of chicken flavoring from ramen noodles

Mix thoroughly.

Just before serving, toss the sautéed mixture with the slaw mixture and add dressing. Mix well and serve. Feeds a crowd!
